Hi from the Cookie Monster! I just made another big batch of my Pistachio, Elderflower and Lemon cookies to fill up my cookie jar for harvest and boy are they delicious. If you feel like making something simple that still sounds a tiny bit fancy (I’m looking at you elderflower) these are the ones to try.
125 g melted butter
1/2 cup brown sugar (I used light brown sugar for these cookies)
1/2 cup of sugar
1 large egg
1 tsp of vanilla bean extract
2 cups of self rising wholemeal flour
1/2-3/4 cup of chopped pistachios plus some extra for decoration
Lemon zest from 1 large lemon
1/4 cup of strong Elderflower cordial
Put the oven on 180 Celsius.
Mix the melted butter with the two sugars and the vanilla bean. Add the egg, stir and then add in the flour and Elderflower cordial. Mix until it’s all combined and then add the pistachio.
Line baking trays with baking paper and roll I tbsp worth of dough into balls. Leave about 3-4 cm between the balls and flatten them slightly. Sprinkle with chopped pistachios. Bake until golden, about 10-15 should do!
